Marinated Cabbage Slaw from Jiko – The Cooking Place, here’s the recipe for six servings:
1 cup white wine vinegar 1/3 cup sugar 1 teaspoon celery seed 2 teaspoons caraway seed 1 teaspoon sambal oeleck (Asian chili paste) 1/2 head of cabbage, thinly shredded 1 cup shredded carrots, about 4 large 1 cup thinly sliced red onion
1. Bring vinegar to a boil in a small saucepan. 2. Add sugar, celery seed, caraway seed, and sambal oeleck; simmer about 10 minutes, then cool. 3. In a large mixing bowl, stir together cabbage, carrot and red onion. 4. Stir in the liquid. Marinate at least 8 hours before serving (best if marinated 24 hours).
